This is what I did today in PA. A hickory smoked beef brisket, with a north Carolina style spice rub. No sauce needed. Delicious. My girlfriend bought her dad a smoker for Xmas, and I gave it it's maiden voyage today with a 4lb. hunk of goodness. i think the first Insanity attempt I made, I didn't make it out of the Project Lazarus area without several deaths. This time, no dying, but I've got red lines all over the screen most of the time.
