This is what I did today in PA. A hickory smoked beef brisket, with a north Carolina style spice rub. No sauce needed. Delicious. My girlfriend bought her dad a smoker for Xmas, and I gave it it's maiden voyage today with a 4lb. hunk of goodness. The whole process, from setting up the smoker, to curing it by using it once without cooking anything, to getting, prepping and cooking the meat - took most of the day, and all my clothes reek of woodsmoke, but the meat was goddamndelicious.
