Effectiveness
Each kind of meat has a different effectiveness due to their radiation and healing ability as well as other effect. Out of all the meats, the Yao Guai Meat has the least amount of healing per point of radiation (0.9 HP per 1 Radiation), however, it does have the positive effect of granting 10% damage, so the effectiveness of this meat can be debatable.
The meat that offers most health per points of radiation is the Softshell Mirelurk Meat, which offers 15 HP per 1 Radiation
The NukaLurk meat also has a very high effectiveness because it only radiates 6 points, while it heals 20 HP and gives 10 AP points.
Since all meats have such high radiation compared to meds and drugs which have none, and their effects are much lower than meds and drugs, their effectiveness overall is quite low and should only be used as a last resort or in case you have a lot of RadAways which would easily negate the radiation
