Montblanc is amoogle. His personal history varies depending on the Final Fantasy game he appears in.   

Final Fantasy XII

Montblanc appears as leader of Clan Centurio, the monster hunting guild. Found in the guild hall in the city of Rabanastre, Montblanc usually issues the player with the most Elite of monster hunts. 

 
It is eventually revealed that long ago, Montblanc's mentor was killed by the might dragon Yiazmat. His purpose for setting up Clan Centurio was to find the strongest warriors in the land who might stand a chance at avenging his loss.
