I extremely recomend Core-A Gaming channel for really good indepth and easy to consume essays on fighting games and the FGC in general
The official arcsys videos will give you a general overview of what your game plan should be with the character you picked. Here is the playlist with all the characters.

Another really good source of information is https://www.dustloop.com/wiki/index.php?title=Guilty_Gear_-STRIVE- here you can find pretty much everything you need to know about the game: frame data, combos, strategies, counter strategies, etc.
(some data might be incomplete now bc of the nature of this being a wiki and the game being brand new but over time players will fill the wiki with more and more data).
