Higadillaz con Jerez
8 ounces of chicken livers
1 tablespoon olive oil
1 onion, chopped finely
2 garlic cloves, chopped finely
1 teaspoon fresh thyme leaves
2 tablespoons sweet sherry
2 tablespoons heavy cream
1/2 tablespoon of paprika
salt and pepper
Trim the chicken livers as needed (cut off any sinew or questionable spots!). Cut the livers in to smaller pieces if you so desire. Heat the olive oil in a frying pan and add the onion, garlic, thyme, and chicken livers and fry. When the chicken livers are well cooked, add the sherry and cream and cook briefly. Add the paprika and salt and pepper to your taste and serve. Garnish with additional thyme if you feel so inclined.
