I think Uncharted 2 is the big one. I'm not sure it did much that was brand new, but at the time it was the peak of the "open play --> set piece play --> cutscene" gameplay loop and it's still one of the games to get closest to feeling like you are playing an action movie. Plus, it holds up really well. The other Uncharted games are good, but this is the one.
Also, If you are in to indie or art games, Journey is beautiful and shouldn't be missed either.
Killzone 2 and 3 are very good games, but might show there age in a era of fast paced shooters. If you want to see how far that series has come. Get the trilogy pack and play Killzone 1 "HD" I'll warn you, it's rough...
Flower - I think Journey is a better take on a similar idea, but still worth it. Motion controls a little frustrating, but still beautiful.
Tokyo Jungle - Fantastic game that straddles the line between an action arcade game and a real time roguelike. Pretty fun co-op too.
Disgaea 3, Disgaea 4, & Disgaea D2 - Disgaea games are getting a bit tired, but they are still fantastic Strategy RPG's.
Valkyria Chronicles - Just came out on PC and you should probably play it there instead, but if your rig can't run it, the PS3 game is just fine. A little bit of XCOM and a little bit of Fire Emblem, it's one of the best games of the past generation and an easy recommendation.
Uncharted 2 - It's a fantastic game, but, frankly, the rest of the series isn't really worth going back to. There are cuts of all cutscenes in all three games into movie-length videos on youtube. I suggest watching the one for the first one, then dive into Uncharted 2.
Ni no Kuni - Not exactly the best paced JRPG out there, but it's worth your time.
