I was thinking of buying one of the DLCs for Assassin's Creed II. But, I was wondering, which of the DLCs did you guys prefer? I'm curious as to which one seems more superior gameplay-wise, story-wise, etc.
 
I think I'm inching towards Bonfire of the Vanities right now, but I want to hear some opinions from people who've played them to know.

Bonfire of the Vanities is better but you need both do get the full story. Deal of the week FTW.

what's the deal with the pack with the 3 extra templar missions?  are those really worthwhile?  what do they do? 

Bonfire of the Vanities is WAY better. You do need to play the first one to understand the story though. 
 
And I bought the cheaper version, well worth the price it is. I really loved Vanities. Forli sucked though...
